Saturday July 5

Context: Ate like a big last night at Rib Fest (and a couple bad days before that). Today was also a light workout day- just a swim. 

Breakfast: Banana Blueberry Almond Flour Muffin; coffee
I love these muffins! I make and freeze a batch of them. I get 9 or 10 out of the recipe, and usually skip the walnuts. 
 
Lunch: eggs and onion; roasted sweet potatoes
Using Trader Joe's coconut oil cooking spray, I sauteed a medium onion for a few minutes, then added 3/4 cup egg whites (All White's brand) and 1 whole egg.  Added a splash of balsamic vinegar, Trader Joe's 21 seasoning salute, and some sea salt.  The roasted sweet potatoes are just cut up sweet potatoes tossed in olive oil and cinnamon and roasted for about 30 minutes at 400ish degrees. 

I had been starving for lunch, so this was good "volume" food.  And tasty!

Snack: banana and 1/2 T peanut butter
My go-to before workout snack!

Post-workout: chocolate powerbar
Yes, not ideal nutrition there, but I had just swam 3200 yds and I was hungry!  Wish I had some fruit around...

Dinner: Wild Alaskan Salmon with Sauteed  Kale and Sweet Potatoes
Baked a 6oz salmon fillet with some balsamic vinegar and 21 seasoning salute.  Sauteed kale in coconut oil spray and added a bit of balsamic vinegar to that.  Mixed it all together when salmon was done baking and had the sweet potatoes on the side.  Yum!
